SALAD MIX

Our salad mix is a medley of regular head lettuces cut young. We aim to get at least 3 cuts from each planting, as they grow back after they have been cut. Aside from carrots, salad mix is the crop we spend the most time washing. We fill three sinks with cold well water and move the leaves through, (grading out any weeds, yellow leaves, or insects as we go) each sink cleaning the leaves more and more. Then we spin dry them in a washing machine with the agitator removed. We can wash about 7 pounds of lettuce in each batch. You shouldn’t have to wash your salad mix, but a ladybug or two have been known to sneak past us during the washing process! It’s a good sign that we don’t spray our lettuce.

STORAGE: Store in a closed container or in a plastic bag in the fridge. Keeping the greens closed off from the dry air in the fridge can make them last for longer than a week.
