SPINACH

Spinach is surprisingly tough for us to grow within the CSA season. It thrives in cool weather and goes to seed when the temperatures are 70 or above. It’s also the preferred snack of the leaf miners, so we need to keep the spinach covered at all times in the spring, making the temperature under the row cover even warmer than the temperature outside. We do try to have it in early June, but more its more likely to be around in the fall when we can plant it in our greenhouses. Spinach is very versatile, as it can be cooked or eaten raw. We will usually wash the spinach like the salad mix, but occasionally the leaves will get so big that they would bruise in the spinner, so we leave them unwashed.

STORAGE: Store in a closed container or in a plastic bag in the fridge. Keeping the greens closed off from the dry air in the fridge can make them last for longer than a week. To extend the harvest, freeze.
