Its the second to last week of the harvest season, and for Group A, it’s your final week! Fall feels like it has arrived and the veggies are here to prove it. Luscious greens and hearty roots make a perfect combo for nourishing comfort foods. We love roasting a big batch of carrots, beets, potatoes, onions, and squash at the beginning of the week, and eating those roasted veggies on top of salads with some additional protein. This time of year requires a little more time for food prep than summer, but cooking in batches can definitely save time.
