winter squash - butternut

Butternut squash is probably my favorite vegetable because it is filling, versatile, and lasts almost all winter. It’s texture is buttery, which lends itself to being blended into a creamy soup. It’s great roasted with potatoes and parsnips, and even makes a mean “pumpkin” pie. We never really peel our butternuts, especially if roasting for a blended soup, but most people do. All the varieties of our winter squash have been cured, toughening the outer skin and creating a protective layer for storage.

STORAGE: Store in a cool, dark place. Do not store in the fridge. Basements are great storage places. Butternut squash can last 4-5 months if stored correctly.
